italian african fusion - mango caprese

slice up a ripe mango
slice up fresh milk mozzarella cheese
layer with fresh basil
drizzle with balsamic vinegar and olive oil

I encountered this awesome variation on the traditional caprese at torero cafe, kigali, rwanda.
